Proprietor Kylie Pitt got the inside scoop on the sale of the cafe over some 15 years ago. “My parents had retired and I thought they were going to go insane sitting in a corner reading a book and doing nothing else, so I said to my dad, ‘want to buy an ice cream shop?’ He said ‘no, but if you buy it I’ll come work for you!’ So I bought it and he came to work for me. That’s how it started.”
Her dad was a great help in those early days as Kylie worked full-time elsewhere and also began her studies in fitness. “I used to finish one job and then come here and work until I closed it, seven days a week,” recalls Kylie, who is not averse to hard work. And it is this hard work – and a coffee or three a day – that has propelled Kylie and The Windsor Ice Cream Cafe to success.
A self-confessed Rocky Road lover, Kylie’s selection of flavours caters to everyone. “Everyone has their favourite ice cream; no two people are alike. The bestseller is probably the New York Chunky Choc or the Salted Caramel, and then Rainbow,” Kylie says, observing that age can often be a factor that determines taste. “Don’t get me wrong, we still have adults who love a Rainbow or a Rum n Raisin but clearly the younger generations come for the bright colours.” Dairy free, gluten free and vegan options are also available.
The Windsor Ice Cream Cafe also serves gelato and Sorbet. “The ice cream you see we do not make ourselves, but the gelato/Sorbet, most of that we make ourselves. We’ve got a huge churner – a Carpigiani machine – at another location where we make the gelato,” Kylie says. The ingredients? “A lot of sweetness, milk, a little bit of cream on top and a lot of love!”
The team take great pride in playing their part in serving, prepping and making the amazing ice cream cakes they also offer; it requires “patience” to make these awesome designs. Most recently The Wiggles, Kpop, Hot Wheels and the chocolate-loaded are most popular. They’re fun with all the bright colours. Oh, and the Grinch Christmas cake is DEFINITELY THE BEST!
