“We’ve seen the whole of the industry change since I began in the industry in 1995. We’re still working as hard, still doing the same stuff, but we’re serving different customers. Our food is what keeps us motivated. And the coffee. Ten years ago we got into Roastville, a coffee roastery with a cafe, and the cafe is pretty much the heart of our business; it wouldn’t feel the same if we were just roasting coffee and not serving food. We send our coffee beans all over Australia via online orders. We try and use the best, freshest ingredients available and make our own products wherever possible.”
